Two-star chef Syrco Bakker leaves Sergio Herman

Pure C, Sergio Herman’s restaurant in Cadzand, will have to do without Syrco Bakker in 2023. The top chef stands on his own two feet. He announces this on Instagram.

After more than three years in Oud Sluis (***) and more than 12 years in Pure C (**), Syrco Bakker will broaden his horizons in the spring of 2023. It is not yet known what the concrete plans are, but it seems that he will start his own business. ‘I was able to develop and mature optimally in fertile soil. Now I’m ready to write my own story.’

The departure of Syrco Bakker is in any case a regrettable matter for Sergio Herman. Pure C received an 18 out of 20 from Gault & Millau last year, who also crowned Bakker Chef of the Year in 2022. In addition, the restaurant also received two Michelin stars and was quite popular with both a Dutch and a Belgian public.

Syrco Bakker is not the first top talent to close the door behind Sergio Herman. Last year, Nick Bril took over their joint restaurant completely. A decision that did him no harm, because this year Bril can call itself Chef of the Year.

Jeffrey Laarbergen, who until recently worked at Le Pristine in Antwerp, will be the new chef of Pure C.
